I wouldn’t say doing only one job is taboo. I mean most people stick with one or two anyway. The leveling of all jobs, for me at least, is just because I like seeing the levels capped off. I don’t play all of them regularly.

meh I use to main only one job (Dark Knight) when I returned in Stormblood and I was fine, I only really started to branch out to other jobs around Shadowbringers where I felt comfy enough to do so. Before that though I only really played a Archer from beta to launch and before that I played a Lancer where I only reached about level 20 until I discarded that account. I never really noticed any difficulties playing only 1 job but I did get annoyed at how many ! I saw on my map since there's no way to just hide them other then ignoring them. so if you can ignore them (props to you) then go for only maining one job
You are fine playing just one job, but my advise is that you should at least watch a video guide on other jobs to know what they are capable of and avoid situations where your AST drops Earthly Star and you step out of it, you pull a group of mobs outside of NIN's Doton, or your WHM used Benediction a minute ago and you are about to die and don't use Hallowed Ground waiting him to Bene you.
This is pretty much the only game I multiclass/alt in, but don’t feel pressured to step away from the story to reroll if you’re engaged.
Your story completion is what matters for your first character, not your level.
pffft, do what you want. I've been SCH main since 2.0 through all the thick and thin. Do I have other classes leveled? Yes, but I was bored between patches, and I admit the ability to fill in spots as a dps or tank in a group is an advantage but I've never felt pressured to.
Enjoy playing whatever you wish because it is your character.
The only time these things become an issue is if you require yourself to be in a raid static that requires you to have more than one job.
There are always alternatives to the strict adherence to optional content and there are entire discord servers and FC dedicated to that kind of play style, just have to seek it out.
Play whatever you want. They got rid of the requirement where you had to level another class to a certain point to unlock your Job. So if you're feeling pressure to have other classes, then it doesn't sound like it's coming from any game requirements. Just tell whoever is pressuring you that you aren't interested in other classes and want to focus on your singular one.
It's not really a good idea to only have one job, but it's certainly an option.
Getting locked out of PF because you only have one job available and someone is already in as one is a major feelsbadman moment and I think anyone who experiences that will be motivated to level at least one other job in their role.
