Should be piercing due to the majority of the weapons being daggers, but they went slashing due to Katanas.. which we only get a couple of..

daggers in reality are piercing weapons, yes. but in videogames, especially japanese ones, people tend to hold them backwards and whirling around to cut enemys with the blades... something wich is cool, yeah, but in reality you would be killed if you would try that xD
Blue mage with a massive mace could be interesting lol, sort of goes against the scimitar / lighter weapons they've used though. Only suggested Blue Mage even with that issue because A. bestial wrath/power sort of fits the few images you gave but we already have warrior so it must be a different theme than viking like and B. I feel Blue Mage would mechanically fit right into a tanking role fairly smoothly as taking damage is one of their primary forms of learning.
Abuse makes them stronger.
Their tanking mechanics could be taking damage returns health shortly, rather than dealing it like warrior (warrior heals on attacks, bit like Dark) - all about that abuse being his power.
- Like turning damage you're taking into a DoT (X% damage is turned into a DoT for 15 seconds, every 100 potency of damage shaves off Y% of converted DoT).
- Being able to regain lost health via gray health. If you know Bloodborne you got the idea, but the gist is when you take damage a portion of that health lost remains as gray health and dealing damage (or whatever mechanic/spell created) returns portions of that gray health to normal. However, over time the gray health dissipates - so it must be converted quickly if you wanted it back as normal health.
- Returning health after a short duration like reduces damage by 10%, returns 30% damage received as hp (random example). They would also need large hp pools though, at least in tanking stance.
Relatively simple concepts that go with their lore could be how they manifest and see their blue magic. Do they experience it upon themselves or do they watch it?
Azure Eye stance could be their offensive and the Immortal Lion their tank, could add a few gimmicks that empower each other (like the Eye watches over the Lion, and the Lion strikes for the Eye). Just need to be careful not to build a "if I don't MT I'll be awful" job lol. Can make the Lion more dependent on the Eye than the Eye is on the Lion, like Eye is more mage form and can cast a bunch of magics in that form upping their damage but obviously no lion means no defense.
The Gunblade Job's Role has been a 50/50 for me because Gunblade users are often pictured as DPS type characters but here in FF14 we see Gunblade users in plate type armor similar to Tank job and Dragoon's lighter plate style armors.
(I'm not calling DRG armor Mail because the armor designs have been more light plate style armor designs lately)
There is also the Limit Break because the most iconic Limit Break for Gunblade Users is Squall's Lionheart (despite the continue nerf and reduction in animation of Lionheart's animation as FF series goes on) and Lightning's Army of One Limit breaks.
Of course they can make a cheap Limit Break 3 for Tank Job Gunblade being the Player's Character making a loud Lion Roar that gives all party members Defense boost and call it Lionheart. :p
There is really no solid identity for Gunblade Job in FF seires yet as a Job Role but that gives SE a chance to make it either a Tank Job or DPS Job based on how they want it to function.
When I was talking about slashing and stuff, it wasnt about the buff nor the passiv... It was just about the style of the weapons themselves >_<
What would be cool is a Gobby class tank or how about a Magitek armor type class. That could be neat. Going outside the box some.
