Can you recommend any gathering or crafting classes? Literally have no idea where to start in regards to this!

Roulette's might be what you want to focus on some more. Should get you enough seals to keep up your venture coins to send your retainer's out on a constant basis. Also, if you craft, you can just make your own glamour prisms as needed. But that requires a high level crafter in each category you want, so that's not a quick fix by any means.
I consistently send my money so I've not gotten above 500k. But I also make about 50k-100k a day via my retainers selling items (I always have them selling 20 items on the MB and cycle through their prices constantly to ensure I'm selling quickly). I just buy things way too often. Doesn't help that I'm the lone gardener for my FC. We went through 100 krakka roots in about 3 days T_T I wish soil was easier to get, because they're expensive
Crafting is a bit tricky as cross-class skills mean that, to do serious crafting, you pretty much need at least a few at 50 and all of them up at least somewhat. To make your own materials start to finish, you'd want them all to 50 (and eventually 60). Glamor prisms are also spread across them.
All that said. GSM is nice. It has items both pre-50 and endgame that sell well.
As far as gatherers go... Fishing destroys the soul. (On the other hand, some people love it, somehow...). If you level miner and botany (or even fishing) in parallel, you can share all gear except the weapon.
Gathering is either actively do something on botanist/miner or afk fishing - if you have a controller use the vibration function to know when you got something hooked... between that watch a film/read a book/do phonecalls? For botany and mining you need to move from node to node and actively work on it. Fishing can be decent money if you use right baits for certain fishes that sell good (Silver Sharks; Hammerheads always sell but check xivdb.com if used in any recipies and your MB if worth to catch em en masse for each fish).
I have a Str/Vit melded tank and accuracy on my SCH... its a raidthing plus with 3.2 you will be able to meld the tomestone gear/Alex gear (the new ones).
You can "easily" grind materia with Diadem too. Just brain off - bash some dinos and trade your loot for spoils and the spoils for materia... if you are really patient for making gil sell the materia once 3.2 hits. As a side effect you may get some lucky 210 loots.
If a lot of your expenses come from buying glamours and you'd like to start making some of them yourself, Weaver, Leatherworker and Armourer are good for that. They also combine well for providing materials to each other. But as Risvertasashi mentioned, to do a lot of the high-end crafting, you'd eventually want all of them for cross-class skills.
Of the gatherers, I'd recommend miner.. they have more items that crafters need. For retainer ventures, quick ventures are an RNG crapshoot (could get vendor trash chubs, or multi million selling kingly whiskers) or shards are a low cost/low selling but consistent gil making method. The good quick venture items do need max level/decent gear I believe, so for the short term, maybe leveling with 18 hour ventures and sending them out for shards for gil would be best.
If you are actively leveling a battle class, you can do leves and sell the gear. NQ heavensward gear on my server will sell for 5k-30k, so I pulled in a small amount of profit just from hitting my weekly challenge log bonus.
