Grade V crafting materia isn't available from spiritbonding yet, so OP is likely after grade III/IV materia.

Now that's just cruel D:

gear level/ilevel and content/recipe level need to be around the same. the higher the difference, the slower the spirit binding.
If you wear (as an example) lv57 crafting gear, then lv 57 recipes are good to spiritbind (or lv 57 enemies if you wear them on a battle job).

test out different recipe levels or enemy levels or content minimum ilevels to find the best options for your gear.

Maybe tell us what gear you tried to spiritbind how or where

Can't convert gear into crafting/gathering grade Vs though D: checked all the patch notes, nothing about crafting/gathering grade Vs being added in through converting gear.

I highly doubt it'll affect crafting (can you even craft in Diadem?) but it MAY affect gathering.

no, you cant. Transmute or Diadem currency is the only way to ge rank 5 materia.
