One of the Crabs would be nice for nostalgia sake. However, as a Guttler holder, I am more interested in what unique pet(s) will be available.
If you implemented toads, you could give them special "natural" characteristics to make up for them not having any abilities.
Examples: Inherent high auto regen, high evasion, inherent damage taken reduction, naturally high critical hit and/or double attack rate, magic defense bonus, some sort of additional effect on melee hits, etc.

Opo-Opo because Magic Fruit should be an upgraded Wild carrot, and Opo Opos are just nasty to fight against, so having one of our own would turn the tables. Also the BST in the artifact armor storyline had one.
5) Scolopendrid
Scorpions have always been so cool, but they were very rarely usable until long after you were done with a zone.
Also, on the Guttler Unique pet front, my vote goes for Chocobo. A Chocobo got me into BST, a Chocobo should take me out.

This is really hard to answer, without knowing exactly what each critter was going to be capable of. On top of that, if it's going to be our one and only Lv99 jug, I'd want it to be something extra-special and not a mob type we've ever had before. I'm torn between just throwing out my personal favorite of the bunch and putting a vote behind something that's brutal in the wild in the hope that it doesn't get nerfed. When you mention NMs, are you saying that we'd be getting something that shared their abilities, or is it just for the sake of mob size and appearance?
Of course, I'd like to see all these jugs... except for the mandies, we've got far too many of those already. Please, no more mandy jugs at any level. One thing I would very much like to see is any further jugs coming out having elemental damage reductions like Yuly, so we'll have a pet to counter each type.
Anyway, here's a sort of conditional list.
• Colibri - From a pure cosmetic/favorite standpoint, my first choice. I'd love having Feather Tickle and Pecking Flurry handy, too. Maybe even give it a special version of Snatch Morsel that operates like Aura Steal, since the mobs have no morsels to snatch. I... can't deny though that other options would have more combat capability.
• Chigoe - Evil, bouncing, disease-ridden death. I'm more interested in these just because I think they're awesome than for any massive utility.
• Scolopendrid - Definitely a solid choice either way. Can't say much that won't parrot everyone else. And go with the gold type. My only regret would be that I don't think they're really all that neat as a critter.
• Slime - I'm actually kinda on the fence with this one. I've always wanted a slime, and do still want one, though tanking in general has gotten much easier for BST. I wouldn't sneeze at the extra damage reduction, but it's not like it's a gaping void I've no way to fill anymore.
• Rafflesia - Granted I don't expect any kind of charm effect. It's too bad we can't already use these, they're nifty. Have you guys ever considered changing the Ochus in the Rolanberry Fields to this mob type? These are what Ochus have always been in the other Final Fantasy games, the devs at the time just used Malboros since Raffles didn't exist yet.
• Hanuman (Opo-opo) - Would absolutely need to keep the NM's ensilence and other crazy traits. If it's just a plain Opo that's slightly bigger than others, no thanks.
• Ruszor - Very nice, should the TP moves and traits go through unhindered. It also fits in with my desire for the final jug to be something really out there.
If you felt like putting some extra caffeine in the dev team's food, maybe get them to make the final pet be whatever, but using a new model with a little colibri riding on it's back? The mob would be it's proper type and have the appropriate TP moves and abilities, but the idea is that the colibri is controlling it and working for you? It'd only be wallpaper of sorts, but it would make the pet extremely unique, and have the bonus of giving me my colibri while still being whatever everyone else desired for a functional pet. XD
I do need to narrow all that down though so:
If the Ruszor keeps all it's powers, first choice.
Scorpion if the Ruszor would get nerfed.
And squeeze in a colibri somewhere before 99 if you can.
