Most Profitable/efficient DoH?

Materia will remain a market for quite some time to come. Simply because it's an RnG system and it won't always give you what you are looking for. Even in the notorious end game, there will be a need for multiple sets of the same gear based on Materia. A reasonable goal will be to have an Int and a Mind based conjurer set. One for healing, one for just running around clobbering stuff. True for all classes in differing conditions.

I don't see a lot of need for multiple materia sets. Cleric stance would like to have a talk with you, it would actually be worse for a conjurer/whm to have an int set for "clobbering" stuff. I don't really see anyone outside of tank classes doing that, and even that is a bit of a stretch.
