Am I skipping quests I shouldn't?

i always follow the storyline zone and if the side quest around there is the same level as me or atleast close to my level, i will a;ways do the quest and most quest gives you equip at the end

I've been send to other continents (Ul'dah, New Gridania)

Cities not Continents. If they were Continents(which would be nice), there would be much more content available right now.
