As a WAR you'll be asked to off-tank and deal with ads most of the time. The WAR has higher dmg output by far than a PLD and that's needed to control and take down ads. PLD's have high dmg mitigation and are best on the main boss.

Tanks are by far the most in demand, followed by healers. I hesitate to use the term "in demand" to describe DPS, since if you need one, you can always find one. Speaking from personal experience, i.e. when I queue alone as a BLM as compared to when a PLD FC-mate joins me, you can expect your queues as a BLM to take on average anywhere from 5-10 times as long as a tank's.
