I like how people expect me to want to level Monk after I finish Dragoon.
Because I need two classes at 50 that do the same thing.
/sarcasm.

With a lot of folks complaining for a lack of exp and such to lvl to 50 you can see how doing the OPs way will not help the state of the game, besides most people dont have more than 2 combat classes up to 50.
Did you know that you can switch to another class and get the quest EXP before you turn in for that specific class? I have not tested if it works for FATEs, but i sure hope they do.
If the quest is 47 for example, you did it with a 50 Warrior, that quest can only be turned in by another class of at least 47.
What I am saying is, If I choose to turn in said quest with my Maxed-Warrior (assuming I have no wish nor desire to level all 18 classes as someone so cleverly puts it), then the OPTION to convert it to Gil should be there.
If you choose to hand in that quest with an appropriate-level "other" class, then power to you.
Quests are NOT infinite and once done, are OVER. And the gold converted wouldnt be astronomical anyway.
Use for your other classes - As much as I'd love a gil fountain by not leveling other classes and turning all quest exp into gil, that'll cause an issue.
