it just makes it from that point on when you get consumables they go in page 3, materials go to page 4, etc

An actual sort would be more useful and one for your retainers too.
You'd think organizing would be in their job description

Also it's limited to what you acquire from that moment, rather than anything you might have on you already. Be it transferring an item from the retainer to your inventory, or mob drops and quest rewards.

An actual autosort is coming in 2.1, if I recall right. So we just need to be patient for a little while, and we'll get it.
