I have a casty main that does casty things and does the weaving/botany/culinarian/fishing/alchemy/carpentry side of things, and a tanky alt that does the fighty/stabby and metal-related things.
And another healer on a backup server for a rainy day.

Cigaran will be my main character and he'll be leveled in every Class and Job there is. Disciple of War, of Magic, of the Land, of the Hand, it doesn't matter; he's going to have 50 levels worth of it when I'm done.
I do however plan on making two more character to see the story lines for Ul'dah and Limsa Lomisa. Past the story lines though, I don't plan on really leveling nor developing those characters too much.
As long as one levels up the right complementary classes for cross-class skills, no, you're not actually gimping yourself at all.
For what it's worth to the OP's question: I'm an altaholic in every MMO I touch. I need the variety of different looks and different themes for each character.
Job =/= class, just so you know.

I have a female miqo'te I intend to level as a CNJ/WHm at some point, whose progress through the game I will record. My main will have most everything else leveled aside that.

While I have a total of 8 characters, spread out over 8 worlds, they're essentially played the same: one character for everything. This should keep me extremely busy for the foreseeable future.
I would have less if I didn't have so many friends spread out on different servers, and they're just as unwilling as I am to leave the ones they're on.
I LIKE the fence. I get 2 groups to laugh at then.
I have two characters, one on a Legacy server to play with my legacy friends and one on a non-legacy server to play with my non-legacy friends who didn't want to start on an established server. I play them both as all classes/professions. Its a little crazy sometimes...

I thought what I'd do was, I'd pretend I was one of those deaf-mutes.

A reader lives a thousand lives, the man who never reads lives only one. - George R.R. Martin
I play with two characters. It's not for my own enjoyment, it's because I'm unintelligent and don't understand how the game works.
I play two Hyur midlanders, a man and a woman. The man is primarily a Gladiator/Paladin with mining and armory. If time ever permits, he'll also take up goldsmithing and even blacksmithing, if just to meld material to swords. If they add Red Mage, he'll level whatever that's tied to.
The woman is a Conjuror/White Mage with botany and weaving. If time ever permits, she'll also take up cooking. If they add Dancer, she'll level whatever that's tied to.
Sometimes it's inconvenient, such as how both need to level Conjuror, and opportunities for dualboxing are almost nonexistent simply due to the pace of this game (as is many things even while only playing one at a time, like taking a sip from a cup when in a dungeon, or hoping to avoid telegraphed attacks if I'm scratching my nose and don't have my fingers on the movement keys immediately when it starts. Thanks a lot, WoWers.)
But having the two together is a lot more satisfying than a single superman. It also allows me a lot more flexibility in my behavior; sometimes I can be more contemplative and firm, other times I can be softer and warmer.

Or alts? Or!? Haha! How boring would that be!
While I always intended to roll multiples because, (come on admit it!), half the fun is creating a new character... The open beta, then early access, then launch, problems caused me to just.. keep rolling more a lot faster than I planned.
But still. It isn't about having one for everything, or one for each.. It is about playing the character, and figuring out who they are.. I even use the opening question as a gauge of how I want to play the role. (So far only my female Mi'qote cares about wealth. She started in Ul'dah, naturally.) I spent probably over an hour just figuring out how each looks...
I do have one Lalafell who I am pretty certain is going to be everything though. All things to all people. Because.. Well, how can she not be? She is a lala!![]()
Am I crazy? Probably.
But I am not short of things to do!![]()
