as a PLD tank, I love protect. Especially WHM protect that gives me magic def as well. I'm still gearing up, but I have I think ~830 defense(phys and magic) and with protect on it brings me to about 900. That is a LOT of defense just for a 2.5 cast spell. Well worth it. It's like an extra piece of equipment, defense-wise.
Sadly, though, as a PLD tank....I prefer SCH healers to WHM most of the time. The shields just work together so well with PLD as the mitigation tank.

Seriously though, I am thinking of doing a macro that says in party chat: "Casting Protect in 3 seconds. If you run out of range, you will have another chance in 30 minutes. Don't be fail, wait for buffs."

To be fair, if you haven't played a class that buffs, you may not know that you can't buff during cutscenes (which is idiotic). If they DO know that, and they still run off, then they're just dumb.

Eh. If they run off just stand there and politely tell them to get their you know what's back to you. It's a little petty but they tend to learn quickly ;P luckily I have not encountered this issue, my problem is non WHMs casting protect. Advising them that mine is better usually fixes that problem too though.
