This is my main, just started the game recently so I'm not 50 yet. Going to re-vamp all my skill placements and keybinds when I do since Dragoons are very rotation heavy and my final rotation skill is at 50. Just a disclaimer! Eventually the hotbars will be hidden and skills completely remapped (1,2,3 ; alt+1,2,3; ctrl+1,2,3, shift+1,2,3) once I get used to the gameplay and skill sets.

Always loved the classic HUD (the one in ff11 over the new default one, which so likes WoW's that won't suit for today's widescreens.)
Chat log in the bottom and keep both sides clear and nice so that my eyes won't lose focus when I have to read chat logs while playing the game itself. Very straightforward. K.I.S.S.

I try to keep the centre area of my UI as clear as possible and push as much as I can towards the edges.
I found myself switching chat tabs too frequently with a single box setup and not getting alerted to FC, LS, or Party chat messages so I broke everything up so I can see at a glance my channels.
The mob list is between the main sets of hotbars so I can quickly click on the mobs as I do tend to keep my mouse near the middle lower portion of the screen.
I do plan on moving the quest log over to the edge next time I'm in game, but I forgot to do that when I was last there and taking the screenshots.
Additionally, I use a Logitech G500 mouse so I have my thumb keys set to CTRL, ALT, and SHIFT to make it a bit easier to use the different rows.
I may also set up my keyboard to be able to use consumables but I haven't bothered setting that up just yet.
I'm also not a big user of macros (I haven't found any uses for them for myself yet to be honest) as I generally prefer hitting a key when I need it instead of having either a /wait macro or a spam macro. That may change when I end up switching to a DPS or Healer, who knows.

I'm assuming you can do it in windowed mode, you're able to set your pixel count if I recall. That or full screen mode and just adjust your pixel count accordingly.

As far as I can tell Full Screen caps out at Full HD - and I could see no borders to the Window in his screenshot.
