Anyway to stop doing a job?

any way to change leatherworking to armorer?

You don't have to drop leather working. Just go pick up armorer at the guild in LL. You can level every class without having any negative effect on your other classes.

You can. Crafting/Gathering classes are exactly the same as fighting ones. Picking a new one doesnt reset the old ones.

It's actually not a job, it's simply another class and you can join all 19 guilds to have all 19 classes open without affecting anything at all in your game or main class. Jobs are (de-)activated by (un-)equipping the souls stone and - again - have no (negative) impact on anything. You can freely change to / from any class by changing the main weapon or tool. If you don't want to develop any of the classes simply don't use it / ignore it - there is nothing more to it really.
