They technically could see everything you send and receive, just like your ISP can (in fact when using the VPN, your ISP can't see as all data sent and received will be encrypted - which is why it won't be throttled as P2P data). This includes websites, passwords entered, anything else online based (while connected to their servers). Their policy is that they keep minimal records, but may sell some information on your usage to selected 3rd parties for advertising (how they make money from the service).
I'm avoiding this solution if at all possible but I'm sure I'm being over paranoid. It's a matter of whether you trust the VPN service and their policy or not. It worries me that because they encrypt everything it could be very difficult to trace if they did mishandle your personal information.
Just a heads up. RCN does have a ticket in and they are investigating whather or not the problem is actually on their end. I spoke with them yesterday and they said they are investigating server. I was told I would know definites today.

No, the virtual keyboards are to protect you from keylogging programs that record your keystrokes. The VPN would still have your data pass through them.
Another more secure VPN solution would be to pay for access. Highly regarded services such as https://www.privateinternetaccess.com/ don't keep logs of your usage and offer encrypted access to low latency and relatively local servers.
