You can dye the crafted ilvl 70 items like Vanya, Heavy Darksteel, Darksteel, Gryphonskin.
Only some quest gear and the GC gear can't be dyed from what I've seen.
Some gear is meant to look unique by design. Dying is mostly for crafted gear. Yoshi-P did say later on he may ease the restrictions on dying for unique gear as newer, better gear comes out.
Major problem is that many undyeable pieces I've gotten aren't unique in any way. Stock model with its default color scheme. We should at least able to dye anything that looks identical to a fresh piece of crafted/bought gear.
I understand not being able to dye GC gear; it's a uniform after all.
I think the drops should be random color and "unless some form of magic prevents it", they should be able to dye.
But I agree that the "dye-ability" of crafted gear should be utterly limitless.
