so whats the benefit for EU players playing in EU server thats hosted in canada latency wont be better?

EU servers should have more people from your timezone. This makes it easier for you to find group content. I can't think of other benefits

I just did a tracert to the login server and you can clearly see on hop 12 it hit a Multiplexer in Montreal so that should answer your question.

It's cheaper and more convenient to house all your servers in the same area.

The latency so far hasn't been detrimental for me during any content and i'm in Ireland.

Well, the latency from Western Europe to East Coast North America is typically very good. My pings from the UK to the servers is only ~90ms which is perfectly fine.
