I understand the whole basis of an MMORPG is a massive online venture... but at the same time, XIV forces me to be online to do 90% of the game solo, outside of dungeons and FATEs.

This is an MMO, a Massive Multiplayer Online game. There is already a "single player mode" it's called the new Trust system and MSQ. Or job quests, most of it is already solo content with the exception of fates, alliance raids and raids in general. You can do everything you want just about solo. As for offline, that's a double negative that makes zero sense given how this is a MMO. If your ISP is so bad or you're in the middle of the Bikini Bottom in the Pacific that you are constantly getting yeeted by your server maybe this isn't the game for you.
