If I should decide to play a White Mage, or some non melee job extensively, can I "respec" those STR attribute points into something else?

When you change class your accrued attributes will all disappear to whatever level your new class is. So you can then put them in new places without affecting your other classes.
Also, you can buy an attribute respec from your GC quartermaster for 10000 credits, I think.

Each class has its own attribute points you can also get an item from grand company to respec your points
