Korea may be playing on Jap servers, but China wouldn't be. There are various rules about online gaming in China which is why most game publishers have to setup separate servers inside of china for that player base.
I find it hard to believe that there would be many Chinese players at all playing FROM mainland China. Taiwan and Hong Kong possibly. Still wouldn't be a large population in my opinion. I have lived in China and am fluent with Chinese and Chinese culture, and my personal opinion is that a game like FFXIV: ARR would be quite difficult to penetrate into the Chinese market. Do you wonder why we don't have a Chinese version of any of the FFXIV service websites?
I do think there could be a small population from South Korea, but again that's unlikely to be large enough to be of real significance.
I may be wrong, but I don't think the game is available in any of those countries. China in particular has very strict laws with regard to what can be depicted in video games, to the point that some games get released months or even years late in China because so much content has to be remade to abide by their laws.
