Also, I've been noticing that gems generally seem to require a gentler swing ie: smaller circles on the hot/cold bar. Does this match up with what other people are finding?

that's correct, gems seem to always require a minimal strike.
As far as money goes, often the L3 areas are usually better for gems. The L3 area gems make the top tier rings, while you get the same gems from L4 and 5 areas, and because you get to L4 areas in the high 20s, a LOT of the L4,5 gems get mined while grinding, while not many L3s do.
Let's not forget that Goldsmithing recipe changes are coming (presumably) at the next major patch, which will probably change the gems used in top tier accessories to what is now found at grade 5.As far as money goes, often the L3 areas are usually better for gems.
