I loved version 1.0
My favorite thing was the feel of adventure, where you, as the player, had to get to know the world without almost any help. The sense of danger in the fields and the behavior of the roaming mobs, those opo-opos following you, the wolves calling for a pack, etc... it made the world feel oppressing and dangerous, and I really liked that.
Adding to it I loved the slow paced combat and awesome animations, with all the inertia in the character movements and the weight feelings they transmitted.
I liked the story and the interaction with the characters, even if that had a change of sign once Yoshi took over (not a bad thing of course, just a change).
I liked that there were not jobs, and that we were expected to create our own mixing skills. I was seriously disappointed when they introduced jobs, instead of just adding the AF and balancing the skills. It's sad that the original THM is lost forever.
Maybe it's because I enjoy doing repetitive tasks (during my studies, working out, doing martial arts, all repetition) I really enjoyed 1.0 and the way the leveling was designed there.
There is a lot of the original version 1.0 I liked, and so little of it remains in ARR that makes me a little sad inside, as ARR is without a doubt a wonderful game, but a different one from what I experienced in XIV the first time around, and from what I expected when they announced they were fixing it.
I know only a few people will agree with me, but, I know I will miss a lot of aspects from 1.0, and I don't know to what game to look forward to get those.

Playing for free.
Even though ARR is definitely a better game under every aspect, i enjoyed version 1.0 for craft system. But for me the best moment it was when i beat "to kill a raven". That fight was so exciting that i hope every single boss in ARR will remind me that feelings.
Literally scouring the world for mats.
I will miss that part.
Pretty much anything that I accomplished with our LSHad tons of fun with them throughout 1.0, and I'm sure it wouldn't have been anywhere near as enjoyable without them. Here is my favorite memory: Our Christmas party/secret santa exchange

Meeting some of my best mates, members for the current Paragon ls (and Anima FC) On Sargatanas. They really made me stay in the game and were actually some of the first players I ever talked to way back. I spent about 1 month in Grid only when I was new! And quite honestly people didn't exactly chat to others hahaha. I remember talking to this one guy with the same name as me (Lann) and then someone else joined our conversation and from there it went on till today. Good times =) Also, exploring the world was great fun. So many sights to see. And I suppose when we got airships to travel and didn't have to run absolutely everywhere. And Chocobos! Now that was amazing!

A different battle theme per region.
A different levequest theme per region.
Did I mention looping music?
I liked how the best gear made everyone look mismatched. Honestly, I'm not a fan of darklight everything including accessories.
I liked a lot of literal realism that 1.0 had (i.e. anyone can wear anything), even if it was a stupid gameplay mechanic.
