I believe even though Mount and Companion is different, you can't have a Companion summoned while you are on Mounting. The fact that you can't initiate any combat in Mounting proves that there should be no use of having Companion enabled while in Mounting.

Correct. Each time you use a mount, you'll have to resummons your Companion. Guess it's good business for those farmers, eh?

Only the barding that you'll get IIRC.

I think people may be confusing legacy accounts with standard 1.0 accounts again. As a non-legacy 1.0 player, I was not able to ride my goobue until (assumedly) I joined a grand company and got my chocobo licence (3102, and then 90000 error prevented me getting that far lol). In the mean time, my legacy friends were able to use their chocobos and goobues straight away.

20 is the minimum level but you HAVE to have a chocobo issuance before you can ride it anyways. that quest doesnt start till you join a GC at level 22.
