No, it cannot. I can only assume that SCH can't either.

There are two Carbuncles; Tank and Mage. They have those 2 broad roles to to exaggerate that ACN is a class, an in-advanced role.

Summoner gets 4 pets which have more specific roles; Tank, DD, Spellcaster, and Ranged (I think that they were the examples given during E3), which are stronger versions of the Carby-roles.
E.g. A tank which can deal more damage and take more hits than Carby-tank.
Not to mention the fact that SMNs call upon the power of the Primals to imbue pets with their powers. As far as we know Carbuncle is not a Primal of any kind.

I'm assuming SCH is the same, since its pet is a fairy which transforms the ACN into more of a healing role, covering the one area in which SMN seems to not be able to.

To sum-up, SMN having access to Carby is redundant, since its 2 roles will be replaced by more powerful counterparts. If you want to use the job purely for the visual effect of being able to use Carby then just stick to ACN. It's how the system was designed, they won't change it now (and frankly I don't see any reason why they should bother).
