Fishing in ARR

I really cant wrap my my mind around, how fishing is such an important aspect to the game, for some...

We don't even know how fishing is gonna work, so why should we complain about it now?
There's not gonna be any fishing vids from beta, since there's no fisher guild in Gridania. So unless devs release some video from their version, showing how it works, you'll just have to wait and see.

Its a past time, heres an example. SE announces chocobo racing, you have no control in the actual racing you just watch as the chocobo run to the finish line. Edit: We/I want to see something more fun come out of fishing than just have it automated.

Except chocobo racing is a bit more exciting. it's a competition where you can win good stuff; Well it depends on what game you're referring to; In FF7 you could control the chocobo to some extent. In other games it was mostly really boring gamble.
Even in 1.0 fishing was just a matter of going to a specific spot, and gather specific fish; with a tedious mini-game involved.
