Again, i'm not asking for detailed things that could change, but i'd like to know the basic foundations...

Saying how many partecipant or how will be structured the PvP for example (world vs world, guild vs guild), need tweaks?

Except, all the things you are wanting info on CAN be up for change. Considering that they have said PvP will not be in at the start, what makes you think it's such a big priority that they have concrete info to give out? We aren't even in Beta yet, you're jumping the gun a bit.

Ok so every PvE encounter can change, any pvp thing can change, housing can change, chocobo raising can change..

Is there anything already finalized ? And with finalized i just mean the idea at least.

I don't think that word means what you think it means . . . .

They have lots of ideas, but you are demanding stuff they really can't give as anything more than vague generalities, which is what they have been doing since alpha. You're just going to have to put on your big boy pants and wait. You aren't likely to see more stuff until Beta starts, and even then it is likely to be videos like those given in alpha.
