The nutritional value of box turtles is as follows:
(As documented by the Eorzean Association of Turtles, or EAT for short)

Vitamin A: 0%
Vitamin B: 0%
Vitamin C: 0%
Vitamin D: 0%
Vitamin T: 1000%*

Increases in experience have also been recorded, but are thought to be minimal.

The lodging of shells in the throats of box turtle connoisseurs is responsible for 37 KOs daily. Chew responsibly.

*Vitamin T has yet to be recognized by any Eorzean association outside of the Eorzean Association of Turtles.

You know, they really should print this on the bottom of all the turtles. That shell is a total choking hazard. Definitely worth it for the Vitamin T, though.
