Actually SE could do this, While Gargoyles are already in game in the form of gargoilles they could have a subspecies that starts out as a statue like older games. They come to life when your so close to them and your character is facing away from them. To add a bit of nostalgia you could allow players to target them to force reveal and perhaps weaken them by using Golden Needles/Stona(In FFIX Softs killed Gargoyles) =D Some of them could be just statues and some of them not and the game could switch them up so you could never be sure which are which.
Edit:I can see SE finding different and elaborate ways for statues to suddenly reveal themselves as Gargoyles.

I wouldn't mind more monster types that generally freak people out.

Minotaurs
Those gigantic moth things in the ToAU zone with Cerberus in it (particularly the ones that were fully grown and could fly.) I hated these a LOT.
I've been saying this a few times throughout XIV. Gusgen Mines is one of my favourite places in XI (Arrapago Reef my most favourite place and has a similar feel). This is a good idea.
