Yasunori Mitsuda (Chrono Trigger/Cross, Xenogears) would be amazing! (apparently he was asked to work on FFXI's soundtrack but was too busy at the time)
Still SE has plenty of awesome composers in-house or able to hire on a contract basis. Nearly every amazing track in FFXI was written by either Kumi Tanioka or Naoshi Mizuta.
Hitoshi Sakimoto (FFXII, Ogre Battle,) Would be another great one to have on board.
