There are no U/U items that are as OP as some melds can be.

"some melds", not "all melds"
and those "some melds" could consume way more time than the U/U
and before you say "its all luck", I just wanna say, learn your probability

You are completely not grasping the whole issue. Thankfully S-E is and that's why they are rebalancing materia stats.

Yes, melding is luck. Who says we have to continue to use the same system? There are plenty of other ways they could implement that has a guaranteed "time spent = progress earned" and be a gil sink at the same time.melding is luck cant add balance to that. your a craftsman trying to make a perfect item but hey you mess up then you have to reso it. people want all this gil sink stuff but refuse to take them. well something has to suck up your gil. people also cry about spending gil but they post about how rich they are and how easy it is to make millions a day, hmmmm.
Btw, just because you read people posting about both not wanting to spend gil and being able to make millions a day doesn't mean it is the same people posting both. That is one of the big mistakes people make when reading forums; they forget about the individual behind the post and just see it as another compliant by the community as a whole.
I think you need to learn your probability. Getting a successful meld is only luck, there is no way to beat the odds. You can go 0/1,000 and someone can go 1,000/1,000 on a 10% chance. Percentages mean nothing when they are on all taken on an individual basis.

Why bothered about people getting lucky on meld?
Save your gil and buy it from those who is willing to meld and sell.
I wouldn't mind if SE allowed a single meld only on AFthen perfect IV materias would skyrocket but would make AF worth wearing and look cool
for the rest of U/U gear hmm idk
The problem would then arise (which i have a feeling it will with relic) of having to wear af for long periods of time. It would imho, get boring. As far as melding u/u items, i dont think its should be an issue. We dont need to do it.
If you are trying to pimp yourself out, you need a combination of BOTH u/u items and crafted/melded pieces. As a main whm, nothing in game atm is better than whm af boots in slot. 40 percent increase in regen potency. Now, since i capped myself on enhancing, i melded sound of certainty to my hat. And since you can only meld that to head, you cant beat DL gloves in slot either. Also swapped out af pants for double melded mnd pie pants for an extra 18 mnd and 22 pie.
My point is that due to the restrictions on what materia you can meld to what slot, you kinda have to mix and match u/u and crafted gear. We dont need to meld it because chances are if youre wearing it, its best in slot or it has a stat you cant meld to that piece

lol no... maybe it would work on some of the lesser Rare/Ex gear but stuff like darklight would become extremely OP. Also where would you draw the line? if it's any Rare/Ex gear then melding your relic would be possible as well. As Chardrizard said, it would mean a lot of rebalancing would need to be done, that isn't going to happen so this topic is pointless.
