Tacos is meant to be a reference to FF11, the other Final Fantasy MMO, I believe, which apparently also had tacos. As you will know by now, they frequently reference prior final fantasy games, all of the time, and that was one of the references.
In general, the developers are not afraid to stereotype each culture, including their own. Kugane, for example, heavily stereotypes Japan filling it with Samurai, stereotypical Japanese music, rice and even taking the Ninja quests there. It's only fair that they also stereotype America and given America never stops talking about tacos, it only makes sense for that to get stereotyped.
Mostly, the city state music in all the cities isn't good. I preferred the original Radz-at-Han music rather than what we get after the Endwalker MSQ is over.
Anyway, I think everyone wants to forget Dawntrail MSQ. Everyone has a different reason for that. For me, it's because I can't come to terms with "cyberpunk FF9". The constant exposure to this, even in the patches, just makes me feel sick. If I want Star Wars or Star Trek, I'll play those MMORPGs, because they actually do it well. I'm playing this for fantasy. Castles, knights, magic, not... electrified, technology-lit, yet supposedly fantasy buildings.
