Right now, in the wake of glamour unlocking, you can spend time planning and farming stuff for the new looks. Or even leveling jobs you didn't before for certain pieces. You can also take on the challenge to solo the new Deep Dungeon. Usually doing stuff in the Field Operation would be in this category but alas OC was poorly planned for this matter.
I really think of all things that this game can improve, is adding side activities that have reasons to be re-played. Let it be RNG drops, or something you can actively farm for profit (e.g. Bozja's Lost Actions).
It just gets more egregious nowadays when we have more and more wait time between patches, and then when patch hits we usually have to wait extra 2 months before the .x.5 sub-patch hits with the actual combat based side content. And also a content-release schedule is due to be re arranged, as the menaningful content practically only comes almost a year after the expansion launches. That's way too long if you're just interested in XIV for a game.

The enormous backlog of things I still have on my list to do
-Leveling all jobs to 70 in order to see all the Class quests.
-Finishing PotD solo to Level 100.
-Finishing the 2nd and 3rd Variant Dungeons I never got around to doing.
-Island Sanctuary (still haven't started that).
-Leveling crafter and gathering professions.
-Completing the Allied Society/Beast Tribe questlines and ranks.
And I'm sure a few others that I figure aren't needed with the point getting across!

It might just be that you get through the content faster than others.
I'm playing other games. I haven't even done a lot of content that has released recently. Once my interest in this game comes back, I'll have plenty of things to do and catch up on. I did this back in ARR and again in ShB and it kept me occupied for quite a while once I came back.
A game shouldn't require 100% of your free time for you to enjoy it.
I'm working on Deep Dungeons and grinding other jobs and such. I'm actually leveling stuff I never touched for years of play and finding all sorts of little things from old expansions that just passed me by from disinterest. How did the Alchemist quests hook me in so strongly?
I've gotten really into fanart and fiction lately? Like, I'm finding excuses to just make stuff again? Even if just my own fun.
Well, times like this Yoshi P has always said take a break and play other games? So why not listen to him?
Can't speak for others or the OP, but I only like to play MMORPGs and at that, I only like to focus my energy, and limited play time, in just one game at a time - in my gaming lifetime it's always been either WoW or FFXIV (not at the same time), so if I find myself invested in another MMORPG, I won't be coming back to XIV anytime soon. Community based Roleplaying also plays a big factor in this.
I understand that XIV may not be the best candidate for somebody that exclusively plays it, given the content cadence/replayability, and it is what it is, but doesn't keep me from wishing it had just a little more to it. And like I said, I still get some value of downtime when roleplaying activities are thriving.

I for one am not bothered by the "lack of content" simply because I (me specifically) have a ton of content to still do.
I never tried solo deep dungeons, so that's been fun. I've been working on my Pteranodon mount also and Mentor Roulette. Plus Cosmic Exploration which are kind of all a grind.
I haven't even done all the EX fights/Savages etc. So getting to do that finally.
Through twilight, we endure.

In the "other games" camp. I already have all jobs at 100 which means I already played a lot of XIV, and I'm enjoying other experiences.
I have a couple more pieces of gear to get to 660 for healer and then i'll just log in here and there to keep my house until the patch.
There are things I could do in XIV like get all the Relics I won't even use finished or do the Craft/Gatherer relics or Deep Dungeons, but I'm not interested in that compared to what I can experience outside the game. I still need to grind the last society in DT too but I simply don't feel like it right now, so I won't.
