Yeah, that's A Thing, especially in more recent content.
It's been a steady frog boil since Stormblood; the first time I really noticed it was with the Air Force mechanic in O7 (which has the "sorry, remember it next time" AoE telegraph instead of the virtually universal before this standard one) and then it really seemed to pick up steam with Rathalos. Yoshi, IIRC, is a big Monster Hunter fan and so the first MH collab seems to have really started the "watch the boss, not the telegraphs you've been used to for 70+ levels and taught in hall of the novice" trend.
To be fair, there were curveballs even in ARR and HW, such as tankbusters having the usual random chance to crit and often being untelegraphed so you had to memorize the timing, but that was group content and partly intended to keep the healer alert (something that's been much more lost for healers in recent years, also back then healers had a toggle buff so that they could either do good damage or good heals but not both at the same time, AND it had a short cooldown in between toggles).
There's also the fact that NPCs are heavily subject to balancing issues across xpacs, especially if there are stat adjustments like the EW stat squish (which as I mentioned before made one of the ShB role quests head-breakingly hard for sprouts afterwards).
Flip side, RP duties create a level playing field among main jobs, though - class difficulty balance in solo MSQ duties can in fact pose an issue from time to time (ARR was especially bad with it, the Coerthas leg solo duties were notoriously rough on DPS, and there was the duty from patch 2.5 which ranged from "if you're a tank or healer it's pretty chill, if you're say a Bard you may literally find the raid to be easier") ...
