I agree that a lot of people dislike gathering and crafting so there really are ways fighting to make gil. They just don't make as much due to the investment of both time and gil that gathering and crafting require.

Individually it may not seem as much but considering all the activity that goes on in the wards, it should easily account for millions of gil exiting circulation a day. But don't worry, with the gold saucer there will be a massive gil sink.

Airship and repairs are other gil sinks too, albeit as small as the taxes. There are gil sinks, just maybe not enough of them/not strong enough.
