As nice as it would be to have more races, they should probably expand on those that are available first. Adding new race right now would make the backlog that is already sizeable only bigger.
They should finish working on viera/hrothgars haircuts and hats, which is still work in progress, and they just started upgrading face paints in batches. Maybe they should also add more face options for other races, which is requested for a long time now.
When that's done, something new might be considered without detriment to existing races.

Although I wouldn't be adverse to more "diverse" races ie: not just human with cat ears, this can more easily and reasonably achieved imo with extended customisation of current races. Like adding a third clan variant to reflect and explain more "animalistic" traits to races like Miqo'te and Viera.

I'd rather have more customization options added to the races we have. I don't want to see another Miqo'te adjacent race with different ears and tail, its devoid of creativity and a waste of resources. They could just add options to choose between different tails and ears on these races and its essentially the same thing.
