can anyone give me a quick rundown of which company benefits which classes when it comes to gear the most?

or are they all broad and cover the same spectrum?

In the current stock, they're all fairly even until you get to the Officer's stuff. Limsa's officer's overcoat and hat is most appropriate for tanks. Ul'dah's is most appropriate for mages, and Gridania's is most appropriate for melee DD. There also are some differences in the Lieutenant's weapons. Even so, the original advice still remains: pick the one that you identify with the most. There's nothing in any of the sets that will make or break a class.
