Shadow Flare from SMN. We got that Garuda windy pool now but it's not the same since we could always reapply Shadow Flare any time. Also, the effect of Shadow Flare was way cooler imo.
It's all just Ruin.
Not quite DPS, but Scourge from DRK. Still to this day one of the most satisfying skills the game has ever had despite being an otherwise extremely boring 30s DoT. Miasma 2 has its own charm, as did tri-disaster. SMN was always a poorly designed class, but has a ton of aspects from it I wish stuck around, even the terrible pet enkindles.
Then there's grenade lob and volley from bard that kinda/sorta were re-added elsewhere, but it's not quite the same. I actually miss the Heavensward version of Empyreal Arrow when it was an oGCD with a cast bar, and wish the devs explored that concept on a class better intended to have it, such as a caster. Say what you will about old-school darkside, the animation was nice, as was the unique Rampart that Dark Knight used to have.
Ninja's Aeolian Edge (why didn't it extend huton?) was paired nicely with crush armor (why didn't that give the slash resist debuff?) across from the removed dancing edge (why wasn't this the generic DPS button?) and shadowfang, duality, and mutilate. Heavensward Ninja was just so much better than what we have now, lag problems aside. Had a much, much better flow to it while also having similar APM and 10 fewer buttons to manage. (oGCD mudras bloated it a lot.)
Dragoon's famous pole dance was great. AST's uh...stella? I think, their weird heavy, plus their unique esuna animation. WHM's aero 3 (repurposed into Scorch for RDM, kind of,)
And, of course, high fire 2 and high blizzard 2. You might be thinking: "But they're in the game!" No they're not. Don't lie to yourselves. It doesn't exist. No, the pvp version doesn't count.
The devs seem to have this bizarre penchant for pruning really well animated skills from classes because the base skill mechanically was badly designed or implemented.
Conceptually? Pets, both from Summoner and Scholar. I get that it's a natural thing for MMORPGs that over the years they either remove, factually remove or trivialize their pets to be DoTs-but-with-a-model, but eh, I still mourn it each and every time. Even DAoC removed their Necromancer in favor of a shapeshifting class, essentially. Sad. :'(
I want proper pet classes where the overwhelming majority of the output (independent of whether damage or healing) is produced by the pet via its own attack/casting queue, and my character is mostly using pet commands to add to the queue respectively modify it. Meanwhile the pet is vulnerable to damage, so while my damage/healing is vastly automated, I need to invest my time into babysitting the pet around AoE damage and boss abilities.
The old abilities I miss? Egi-Assault 1 and 2, Shadowflare, the summoner's DoTs and Bane, Radiant Shield, and the three Aetherflows that, when used, allowed access to a crucial spell — all of that is completely gone in this soulless and senseless version of Summoner we got in 6.0–7.0.
For Summoner, I also miss the Phoenix 1-2 combo and the Bahamut turret, and of course, the 20-second Demi.
As for White Mage, I'd say I miss Aero 3.
For Scholar, the DoTs and Bane.
For Astrologian, the old card system with the Royal Road, etc...
it was so amazing, and now AST has lost all of its shine.
I hate playing it now, even though it used to be by far my favorite healer back then.
And overall, I miss the team support spells that were shared between jobs — they really gave a true sense of party synergy.
Things like Manashift, Apocatastasis, and so on...
I really wish the use of mana would return for melee jobs, for tanks, and also the return of MP management mechanics like Mana Ward or similar on ranged DPS.

Forget the name of that skill but Arcanist? That could spread DOT to nearby mobs.
Piercing talon in pvp. I find itb fun that l could play dragoon as fake ranged. It dealt more damage the further you are from the target And has no cooldown
Scholar has been pruned of a lot of interesting abilities, such as having multiple DoT's and the ability to spread them via Bane, you also had a separate fairy with its own abilities, including AoE Esuna. There is also Shadowflare, Quickened Aetherflow and Rouse. Expedience also used to be 20s but was shortened to 10s because the devs hate fun. Now SCH feels like every other healer when it used to be quite unique. White Mage also had Aero 3, an ability everyone liked, removed as well.
Dark Knight also had cool stuff, like Scourge, old Blood Weapon (added a haste) a parry proc that reset Low Blow (did damage) and you could empower your defense cooldowns. You also used to have to manage your MP as it used to constantly drain, which was cool, but that was all pruned.
I hate how they removed Diversion, it was a button that dampened your aggro, which was useful when the tank died and all of a sudden targets you with the damn tank buster, I used to be able to avoid situations like that, now I literally cannot.
Bard used to have lots of little interactions with its DoT effects and the procs added a lot to its fast paced gameplay style, now the DoT's are effectively vestigial because they put all the procs on the songs and removed interactions like Sidewinder. The reason people think DoT's are boring is because the devs deliberately make them as boring as possible. Bard and Machinist could also refresh party MP, completely removed. Machinist also had an AoE attack where they lobbed a grenade over the enemy, trick shot it and the shrapnel rained down on them, cool as fuck, removed.
Paladin used to have a combo with Goring Blade and it had a uniquely good sustain among the tanks, but it didn't burst hard enough because of the 2 min meta so it was refashioned into diet Gunbreaker. Also still mad we lost the awesome animation of Butcher's Block on Warrior but we still have the lousy looking Storm's Path.
Monk had a literal Bruce Lee style touch of death skill that was pruned. Ninja had some really cool abilities with great animations, Mutilate, Shadowfang, Dancing Edge, Duality, all removed.
Old goring blade on paladin, it might seem like a small thing but it ruins the whole gameplay loop of the job.
Though theirs a lot of abilities I really miss, sadly instead of trying to make a ability to work ff14 seems very easy to remove or turn a ability from something that was interesting into something you press during burst once.
