This happens.
These fates would not appear on the map but certain NPC would give you clue and ideas about the location of the FATE. The NPC could be random, a member of the Scions or a previous encounter.
Although they don't give a clue about the location, roleplay NPCs do often appear somewhere on the map when a FATE spawns. For example, when Foxy lady spawns there is a Namai Elder NPC that spawns. During the other FATEs, Mikuzume is somewhere on the map experiencing trauma.
This FATE would feature either a BOSS fight or a Golden Saucer-like event.
Most zones prior to Endwalker have big boss FATEs that need a lot of players and lots of smaller FATE bosses. They aren't that exciting mostly, except the 2 special ones for each expansion that get progressively better each expansion.

I don't know about Gold Saucer events. It depends what you mean. FATEs are not necessarily designed for anything else so it heavily depends what you mean.
These type of FATES would give good exp for leveling up the newest jobs and drop random gear pieces from previous old raids (ARR/Heavensward/Stormblood) usable by all jobs[/B].
FATEs do give good exp. Not much point in gearing up if you're only doing FATEs. Plus there are literally NPCs in each zone that sell gear for that zone's level range...

They did used to have Leves do all this, by the way. Leves involved escort missions and all sorts of activities in the open world. And they dropped gear. But nobody took them seriously so they no longer exist except for crafters/gatherers.
