We've just seen a boatload of very telling screenshots that will tell us so much more than some 3 minute video of some quest being completed. The majority of impact that live gamplay will give us current players is how responsive the interface and battle system is as compared to 1.0. You cannot gauge that responsiveness from a game you are watching and not playing. Therefore, wait until you can get a hand's on, and you will get a much better experience than watching some youtube video.
But that's what mostly everyone is interested in along with any new battle mechanics.
