You just don't understand the mechanics (yes I know what I am talking about because I know everything about hunt fights).

Cat's Eye's entire gimmick is that it has a gaze, but you don't always look away from said gaze. If it has the Wandering Eyes buff, you need to look AT the gaze. It's important to note that it snapshots when it jumps, not when it lands. It's safer if you are not directly in its hitbox or landing point. It's also important to note that this applies to the stack-gaze as well, in which case you look at or away from the player you are stacking with depending on if it has the Wandering Eyes buff.

You weren't clear about Sansheya, but usually people don't understand that it applies Boiling to the closest players. After Twinscorch Veil/Halo resolves, it turns into Pyretic - which means you must stop moving/attacking for 3 seconds or you will take huge damage. Since a lot of players don't understand this, they get killed by it.

There is nothing wrong with the mechanics being this way. When you translate S ranks from Japanese it becomes "risky mob". Because that's what they are. You're meant to learn the mechanics or die trying.
