I... I didn't even notice the feature. At All.
And I flew around a lot making cash (gatherer)... hahaha. I never even noticed!

I hated the mount tilt and had the absolutely opposite response than you did OP. I just wanted to turn it off because it made some mounts unrideable to me, due to them looking so ridiculously goofy. However, if there's a toggle, they shouldn't have adjusted the tilt too. No clue why they did both.
It should just stay the same for those that really enjoy it and the toggle for those that don't. I really don't get the devs decisions these days, it just doesn't make sense.

As someone who was on the fence on the tilt previously, I want to thank the devs for listening to the people who said they were getting motion sickness from it. I appreciate that they listened and added the toggle. It was so bad on the Landerwaffe mount, because even the slightest tilt while moving forward in the air would make the huge wings teeter back and forth so fast that it really was not pleasant, at least for me. So I want to be clear that I really, REALLY appreciate the toggle. And those who got motion sick probably appreciate it too.
I do think that the update is perhaps a bit strong on the nerf to the tilt. I definitely liked it on some mounts but not others, and I did think the turn was sometimes a bit too deep. But I 100% agree that they could have kept it as is. Sorry to the devs to constantly go back and forth--but nerfing it along with the toggle is not what I was expecting at all.
I think there's a decent middle ground to be found here, so if the devs do look at this thread, please know the toggle is absolutely appreciated, and that you can give us options to have the tilt be stronger if wanted. I think a drop down would be perfect so we could choose between options.
Please make the tilt effect look a little stronger when it's active.

Feels like SE knows I installed Guild Wars 2 and was only grudgingly downloading the patch to check if my guy survived the GU meddling, because I'm stuck having to reinstall/repair my game files! I'm just sitting stewing about how boring the broomstick's gonna be now >:C

I welcome the option to toggle tilt.
The only change I see is that flying mounts tilt slowly now which looks far more natural than before, you really have to turn hard to see the full tilt.
Character tilt ... I don't like, it looks weird to tilt if I have to run 2 or 3 meters from point A to point B, if it tilted slower and only became visible after a few seconds of running then it might have been nice.
The solution would be to add a setting for tilt degree and when to begin tilting.
I would have preferred if they brought back the physics from 1.0 when the characters showed weight on their movements with some very nice animations, it could be optional to use it or not. I hope they do it sooner or later.

I just want my fun tilt back the way it was ;-;
The toggle was a perfect solution, we didn't need this nerf as well.
I wish they'd revert it. There's an option to turn it off now for the people who got motion sick so let the rest of us have it the way it was. It's barely noticeable now.

Just give us sliders in the options menu and leave it at that :V
Have one end of the slider be "Barely Humanly Noticeable" And the other be "The very edge of what should be considered too ridiculous for a professional to produce"

I did think the tilt could get a little too much on a few certain mounts, and I was totally in favor of a toggle for the people having motion sickness issues with it... but now I can barely even tell it's there at all. I had to find my settings and see that they were all checked. Now I can only notice tilt if I'm flying and REALLY crank the right control stick hard (I play on controller).
It feels like mount tilt was another half-finished addition to Dawntrail. They cranked the lever too far one way and now cranked it too far back. All people wanted was an on/off switch! It's a nice addition that I think adds to the world but it feels like it wasn't played around much with or tuned at all before release, nor now.
