On the one hand I'm fine with not getting any new Jobs, but that is easy for me to say as the game pretty much has every fantasy I would want to play (and can conceivably see SE fitting into the formulaic combat system) covered short of an archer that is not Bard.
On the other hand I'm really pessimistic when it comes to Job reworks. Past reworks have crippled my enjoyment of both Summoner and Monk and I'm not sure I want to gamble on one of them eventually striking a nerve with me instead of just making everything worse again. Job reworks in XIV are something I've come to dread, not look forward to.
Besides, if they don't have new Jobs for an expansion they lose like half of their selling points so I can't see them move away from the established formula until we reach the maximum sustainable saturation, especially not for a gamble that might well backfire on them by disgruntling everyone who liked the Jobs pre-rework.
Bring back zodiac weapons.

Yes, I'd rather they overhaul the jobs to make them more unique and also overhaul the battle system so it's not just 20 seconds of excitement followed by 100 seconds of boredom and then repeat until boss is dead.
There's really no point in adding another job if they're going to further strip old jobs of systems just to prop up the new jobs. Like how VPR cannibalised MNK (only to end up losing their timer management anyway).
Well personally no, I always find new jobs to be the most exciting bit about the expansion...

I would rather they fix what existed currently. Given all the feedback about all the jobs and all the issues each of them have from overall DPS to their kits and utility when compared to each other, the more jobs they add would just add to those complaints people have depending on what they are. However, we're going to get two more jobs come 8.0 release no matter what, so I guess it's more just hoping they actually take more time to attempt to fix things and not just do "This new job we released is super strong/super weak compared to the rest...let's just supercharge everything/everyone to make it more balanced!" instead of, well, actually attempting to balance things out between all the jobs.
At the same time though...

Definitely. But I don't really want anything like in the OP with specs within jobs, that just leads to more balance headaches (especially if they don't want to add jobs anymore because it's getting too unwieldy).
If the devs chose to not release a new pair of jobs for one singular expansion to rework every existing class into a new and exciting way I would be all for it. We can stomach not having 2 new jobs for once if it means all other jobs become more exciting in return.

What purpose would it serve? They'd give up having two new jobs, spend a bunch of time and the forums and Twitch would still be wall-to-wall raging about the "new" job designs. It's a permanent no-win because no one knows what they actually want other than "perfectly balanced, zero meta, completely unique always best job to play in every circumstance with no downsides but also nothing like any other job"
