This is my story exactly. I enjoy the difficulty level of DT dungeons personally and have a blast even with the other two bosses in this dungeon. Strayborough 1 is the only exception. It's just an annoying chore to get through instead of being fun. Either me or at least one other person in the group says "hate that fight" every run and no one ever defends it.
There was no issue with fall guys. I grinded out the title fairly easily and did not notice anything particularly unfair. Having to compensate for latency is the reality of online gaming, most people are just reluctant to own up to mistakes and would rather blame something inanimate.
And yes, I consider it one of the best dungeon bosses in the game. Simply by virtue of the fact that it has such a high kill count. Content only has value if it can meaningfully challenge you. Something being difficult enough to force mistakes out of people passes that test with flying colours.

Fall Guys was the perfect example of a consistent mechanic being consistent in not following common sense and being intuitive. It was literally designed around snapshots and telegraphs not matching anything at all on what was actually shown on screen but with very consistent timings, just they were timings happening literally in the void between or at seemingly random times. It asked you to follow cues and then learn the actual timings that came attached to them, which was the epitome of a design specifically made to leave every player confused about what they were seeing. You were better off learning timings and count in your head while playing with a blindfold.
You just described how every aoe in the game works. The higher your latency, the more desynced the animation is from the telegraph. This game has worked that way for more than a decade now, at some point you're going to have to accept that it's part of the difficulty and roll with it.
It does not have a high kill count though, since if you aren't caught in the wrong spot, getting caught hardly deals any damage. The punishment for getting caught is less taking damage, and more not being able to do anything, which is extremely boring and not fun to play, since, well, you can't play. Yes and no. Every AoE in the game works like this, but not every AoE has crazy animation/resolution delays like Fall Guys had. They all do have them, but not like this, by far. To me it felt exactly like the resolution delay of a pvp LB and with little logic or consistency between all of them.You just described how every aoe in the game works. Yeah no, Fall Guys stuff was fun but there's a reason most people got what they wanted and dipped. Also what high kill count? As I stated in another comment the boss seems designed to get hit to avoid getting headed, and when you do get headed the punishment is just that the boss takes longer to kill. There's far more bosses in this game that I can think of that have a higher kill count.
Idk I dont have this problem i get through the first fight really well. Us the adds arent much of a threat anymore

There are far worse animation disjoints in content with far higher stakes. All the way from the original exaflares in ucob, to as recently as TOP with the wave repeater in p4. It's part and parcel of the game, you may as well take some agency into your own hands and adapt to it. Most fights in this game (let alone dungeon bosses) are so easy that perfect runs are the rule and not the exception. Getting hit by anything at all in strayborough means it has already achieved something that most encounters can't. The randomness means it can do this for a long time too, potentially forever. That's infinite content, and what every other fight should aspire to be.
If the game can surprise you into making a mistake, any mistake, I think that's a rare treat. It's something to be savoured instead of disparaged.
