While I would also like the freedom in fashion, I think Yoshi P has said the lunchbox is "packed with love" or something along those lines. Or in other words, the team didn't want to hide it. The reasoning with NPCs, I guess, is that they aren't full Machinists and simply carry firearms.
Perhaps given time, the team might change their mind.

Wouldn't object to hiding the box, though. Yeah, it explains in lore why we have infinite ammo, but so do bards and nobody questions it.
