I really wish we had a job quest to unlock our final level 100 ability for each job. Would have been nice to add some lore and explanation for the ability. If those do exist and I just didn't manage to find them, I apologise.

Agreed with this. Homogenisation of jobs feels even worse when doing role quests you realise you essentially don’t play an individual job, you’re playing the entire role.
Lore for new abilities would also be highly welcome, but frankly it’s very clear they simply do not give any thought to the ‘lore’ behind abilities anymore. So even if they did come up with an explanation, I feel like it’d just be a cop-out answer as opposed to furthering our knowledge of the lore behind each job lol.

Barely even that. I've gotten to level 98 on the melee role quest and I've fought, like, two overworld mobs and they were both in the same quest. The rest of it is just cutscene after cutscene.
I did really enjoy the job quests for DRK. especially how the job stone affects your journal entries for job quests. I'd love to see them add more, yet, optional job quests for those who enjoyed them.
I don't mind the homogeneisation that much, as long as the different jobs still feel somewhat unique. I would absolutely welcome more differentiation and IIRC YoshiP did say they're going to be working more on that. Still, I would like Y'mhitra to tell me all about Solar Bahamut for example. It doesn't even have to be a required quest, just a regular blue one that gives lore and nothing else would be fine, in case the team doesn't want to force people to do lore quests.
It would be nice to have a lore reason why my Dragoon suddenly summons Nidhogg. Or why Summoner is suddenly able to summon a never before seen version of Bahamut.
