I'm positive that the new mount animations are the culprit for the motion sickness I'm experiencing, at least. I've experimented with different graphical settings available to me, and the only time I'm getting nausea and headaches are when riding/flying on any other mount than the Miw Miisv (which doesn't tilt). Otherwise I'm completely fine when watching the story scenes, exploring the areas on foot, doing roulettes etc.

In the absence of an immediate solution I would recommend not staring at the mount while you travel, but rather look at other parts of the scene (like the horizon, or focusing on wherever you're going). If it is the mount's animation causing the issue it should not be nearly as impactful to you if it's off in your peripheral vision.

That's very easy to say, but not at all easy to do, especially for some of us.

It's just a suggestion. If you zoom out the mount only occupies a very small percentage of the screen, and it's not like you can never look at it. Since it only tilts when you change direction then that's when you would benefit from looking elsewhere (like towards the destination you're aiming for). I don't stare at my steering wheel while I'm driving, do you?

If you prefer to stay zoomed in to the point where the mount is occupying most of your screen, and you are determined to practicing your nap of the earth flying skills as you constantly weave around bits of terrain then, yes, obviously the advice is going to be worthless.
