Gear change macros? I could see it for that.
Unfortunately, 200 macro slots isn't enough to make all of the quality-of-life macros I use for my combat classes...and that was during Endwalker, before we got 2 new combat classes. I wish they'd give us more slots.
(For those that don't know, while macros do in some ways behave differently than standard buttons, they work just fine for combat. It's kind of like comparing a truck to a minivan; both can do some things that the other can't, and which you use comes down to what your subjective preferences are. The biggest issue is that the macro system is unintuitive and not explained in the game, which has resulted in a lot misunderstandings that have lead to the spread of misinformation, despite good intentions.)

I don't really use macros other than for crafting, but I remember that thread you made. I guess the first thing I should say is that I have every class over level 70. So, the way I have my macros organized is I have 1 row per class. I use them for combat and because there are numerous attacks, buffs and off global cool downs I find it very convenient to macro them all together in various combinations.
Some rows have more macros than others of course. For example, I think my summoner has 5 slots on the summoner bar taken, while the Dragoon has all 10.
I am not a power gamer. I tend to do my own thing, and only do group content solo or when the MSQ makes me. And so I don't mind if it is not the "optimal" way. I just want all my stuff to fit on 1 hot bar and macros allow me to do that.
I know a lot of people don't play this way. That is fine. Play as intensely as you want. For me, with 2 more classes, I would just like 2 more rows for new macros.

The reason not to macro combat is precisely because it locks you into the macro. This might be desirable for a DPS, but is absolute disaster for tanking and healing. The only macro every healer needs is the "raise target, then every party member" Because without it you have to try and pick out the KO'd party member and you might stomp on another healer doing the same. That said, I don't really see why they have the macro's setup the way they do, they should be at per-job level like with #1 and #2 hotbar.
