Meal plan everyone for 28th?

I am thinking about loading my instant pot with a nice angus chuck roast, potatoes and carrots. That should cover the hubby and I for supper for at least 2 days, with some roast left over for sandwiches.

That's takeout night so it'll be Mexican. I'm off work until from June 28th to July 10th so hubby and I will figure out meal plans as we go along.

I dont get cheese on everything bc the cheese sticks to the nachos, ( i gratinate them in the oven) and its good finger food. Some may find it messy but its been my favourite food for years so i think im good at not making a mess lol
