Generally the dev team is approx 2 patches ahead of release, so in this case DT is essentially done, .1 is a ways along, and .2 stuff is getting started. It depends on when the team started to think in this direction, and I don't think we've been given a clear idea of that from these interviews.

My understanding is the battle mechanics changes will be different from 7.0 itself, implying they are already not sticking to their "safe" and "samey" mechanics in the new dungeons we'll get. But they have clarified MSQ dungeons will still be easy.
What they have said is that part of what makes people think things are difficult is when they are different, or unique. So some people will perceive the "risk taking" unique mechanics they are doing as making it harder. But the reason he is saying it won't be harder is because you'll get used to it after enough repetition, and then it'll feel easy again.
He also said the 2 expert dungeons will be harder, because those are optional unlocks. The only 2 we get in the entire expansion btw, unless you include variant and criterion.
He said the raids will have unique and interesting mechanics as well. So when he says 7.2, he is probably referring to the second tier of raids and the field operation.
I don't think he's going to make jobs have more unique elements until 8.0, or not in the sense of a big overhaul, but may add more ideas for skill expression like role actions or minor adjustments, we'll have to see what exactly he means, but I wouldn't expect full job overhauls in the patches so...
He wants players to get used to the content being different and varied before making them handle job changes.
According to him, he also always (every single expansion) makes the first tier content easier because they get a lot of new players at an expansion launch, and rotations change and they want everyone to get used to their rotation first. Then they progressively ramp it up because people become too good at it. So that is another reason he mentions 7.2 a lot.

He's also said that he's in the early stages of helming another game, and if Square holds to their pattern and it's another FF MMO, he could be collecting data and feedback for that so that people are willing to jump ship.
This probably is a possibility but it's still early to make people jump ship. Figure mmo generously take 5-6 years of development if not more. He made clear in a recent interview that it's "trust first, business second" and that he wants to repay the trust by delivering the content that is wanted and by using his position to increase FFXIV's budget.
He's also said the opposite of this. He's said he doesn't want to make a new game at this stage, but didn't completely rule it out because he likes taking on challenges. He said people in Japan are not good at making games (think all Square Enix's failed projects) and that he's lucky that there is just this one successful one (FFXIV), and the prospect of trying to make another one successful feels remote (most likely, again, referring to SE failing at other games). He's also excited to do lots more stuff with FFXIV and has lots more things he wants to do for FFXIV.He's also said that he's in the early stages of helming another game
He also said that although he's looked at who could replace him, it's really hard to find someone who could so he's kinda accepted that it's his life's work now and he'll just be going as long as he can.

We also should acknowledge that with FF11, there was probably an anticipation that it was beyond salvaging long before people could see it, so they kept it in an old fashioned state to this day. Whereas with FF14, they have talked of a second graphics update happening eventually and that the current update has allowed them to use modern technologies behind the scenes - something that is impossible with FF11.
The graphics update looks genuinely amazing if you see the higher quality videos from the media tour.

i remember people crying and whining about 45s/90s/180s but now that it's gone 2min is somehow worse? people complained about certain jobs not being able to put their buffs into their (2 minute) windows
Easiest way to solve burst windows is to remove party buffs so every Job bursts when their rotation/procs see fit.
It will make encounters favor some Jobs over others depending on timing of mechanics though.
