On a personal level, if they do use him, I hope he *is* just a single boss fight. We've had various versions in FFXIV in regards to villains from other games (shoving ARR, SB, and EW spoilers under a spoiler):
In the Crystal Tower raids, we got the Cloud of Darkness from FF3; she's narrative relevant, but not much of an actual character here in XIV.
In the Omega raids, we got Chaos (FF1), Exdeath (FF5), and Kefka (FF6) as single boss fights, with the context that they were not really relevant to our world (can't remember if they were extraplanar, fictional, or something else) and just recreations by Omega for us to fight.
Then in the Endwalker patch quests, we've got Golbez, who is very clearly from FF4 but has an MSQ role and new XIV-specific context and character.
Personally, I'd rather see Sephiroth as a one-off fight if they're going to put him in at any point. It means they don't need to try and adapt him to the context of XIV's lore and world, nor try and force the story to adapt around him as an important part of it - and they can go as wild as they want with making the fight over-the-top.
